Vitamin Soup

I needed something healthy and detoxiful.

Soup tonight was made from spinach, swiss chard, parsley, basil, broccoliflower (only because Kroger was out of broccoli), potato and onion.

Texture was actually dead on, better than I expected, kind of silky and rich without having to add any tofu or cream... I think the potatoes and broccoliflower helped with that.

  1. YUM! I will have to try this combo! I love creamy soups :) Actually, the cauliflower and potatoes help with the creaminess. There is a "cream" soup I make that is simply potatoes and caluiflower: roast 'em, boil 'em, and blend 'em. Presto!

  3. wow - I didn't expect you guys to say "yum!" :-) I mean, I think it is yummy, but it is after all GREEN SOUP, which has such a poor reputation, like something a witch might stir in a pot, or a mean old aunt might serve you for supper, or crazy dieters might eat as part of a restrictive detox... but Chris and I did find this soup quite tasty, and goodness knows I NEED simple, healthy, green foods to feel energized. So, enough rambling - Bianca, broccoliflower is basically green cauliflower. I don't know why it is green, maybe it is a broccoli-cauliflower hybrid, or maybe they just dyed it?
